BEYONDHOSPITALITY is involved with hospitality projects on any scale, from quick operational snapshots of existing venues to large projects lasting years. Below are a few examples of recent and current projects that are keeping us busy at night and are just the greatest fun!
La V started with a phone call from a former colleague that had moved to Austin, TX to create a restaurant on behalf of a wine-connoisseur. Vilma told me that she has all the experience in the world to run a world-class restaurant, but that she needs help to actually create it.
Following many conversations and brainstorming sessions, we created the brand-vision for La V as well as all development guidelines to create a successful venue, ranging from Financial and Budget templates to Design Brief, Light/Sound/FF&E/OS&E/Uniform specifications and kicked off a project that is undoubtedly one of the most incredible restaurants in the US.
Golf Superstar Ernie Els stems from gorgeous South Africa. A few years ago, he started one of the most incredible vineyards near Stellenbosch and created a fabulous little restaurant in a 300 year old historic building named “Big Easy”.
In 2011, we were asked to translate this very local concept into a restaurant that can be rolled out around the world - keeping the spirit of the original yet translating well in the many cultural variances.
Big Easy Winebar and Grill is positioned above the typical hotel all-day-dining and below the white-tablecloth "Fine Dining" – a fun, approachable, relaxed Grill concept with a touch of South Africa spirit and a heavy dose of local connection.
The first Big Easy opened in 2013 in Dubai; Big Easy Winebar & Grill in Durban, South Africa opened in 2015 and Big Easy Winebar & Grill Miami, Florida and Desaru Coast, Malaysia in 2016

Long before we started working with Swire Hospitality, The Upper House in Hong Kong and the Opposite House in Beijing were among my favorite hotels in the world. Fabulous hotels that are a welcome departure from the typical luxury hotel, the essence of what today’s hotels should be.
Swire Properties is currently developing one of the largest mixed-used developments in the USA, Brickel City Centre in Miami and BEYONDHOSPITALITY has been appointed as representative of Swire Hotels to facilitate at all development aspects of the upcoming EAST Hotel, Miami.
Commonly referred to as "Technical Services", we are coordinating all aspects of Architecture, Interior Design, Kitchen Design, F&B Concepts, Back-of-House design & Specifications as well as operational planning such as development of budgets, staffing plans, pre-opening expense details, Executive Recruitment and pretty much everything you need to do, to create a world-class hotel.
